FAQ: Google Explains How To Setup SPAM Addresses In Gmail
I just ran across a great article on the official Gmail blog about how to create disposable and filterable email addresses in Gmail. I thought this was a great feature and decided to share. I personally have been using this feature for ages to be able to easily filter where my email is coming from. For example username+spam@gmail.com would also arrive at my email address. The benefit of this is that I can then setup a filter to automatically archive and file these messages appropriately. Picture below is a good example from Gmail.

The main things you can add to your email address and still get your mail are periods and plus signs. Gmail automatically disregards them.
